chopped niçoise Tuna Salad Sandwich

Tuna salad ingredients:

  • 1 can of tuna in olive oil; extra olive oil drained

  • 1 tbsp mayo

  • 1/4 of a small red onion; diced

  • 2 celery stalks; diced

  • 1 Persian cucumber; diced

  • ~ 2 tbsp seedless kalamata olives; diced

  • ~2 tbsp pepperoncinis; diced

  • A few cracks of black pepper

  • Pinch of kosher salt (adjust to your taste)

Sandwich ingredients:

  • Bread of choice

  • Lettuce of choice

  • Mayo

  • Mustard of choice

Note: This tuna salad makes about enough for two sandwiches.

In a bowl, combine the tuna, mayo, onion, celery, cucumber, kalamata olives, pepperoncinis, salt, and black pepper. Mix well, then taste and adjust the seasoning as needed. Add more mayo if you prefer a creamier texture.

To assemble the sandwich, spread mayo on one slice of bread and mustard on the other (I like using a grainy mustard). Add a generous layer of tuna salad, then top with lettuce—I used mixed greens, but any variety works well.

This tuna salad is also great served with crackers, chips, or chopped veggies, or spooned over a salad for a lighter option.
