Smash Shrimp Tacos
Shrimp “paste” ingredients:
1 lb of shrimp; peeled, deveined, and de-tailed
3 scallions; roughly chopped
2 tbsp of cilantro; chopped
1 tsp of hot sauce of your choice (I did Valentina but you can use whatever you like!)
1 tsp of Kinder The Blend seasoning
Other ingredients:
Tortillas of your choice (I would recommend flour or the flour / corn tortillas from Trader Joe’s)
1 tsp olive oil (per pan)
Optional toppings:
Green cabbage; shredded
Onions; sliced and blanched in ice water
Cilantro; roughly chopped
Lettuce; shredded
Tomatoes; chopped
Lime
In a food processor, blitz the shrimp, scallions, and cilantro together until you have a thick paste. Add the hot sauce and Kinder seasoning and blitz again until you have a smooth paste and there are no chunks of shrimp. Transfer the paste to a bowl and store in the refrigerator until you are ready to make your tacos.
When you are ready to start making your smash tacos, spread the shrimp paste on one side of your tortilla and set aside. Repeat until all your shrimp paste is used up.
Heat up a non-stick pan with some olive oil and once that is hot, place your prepped tortilla, shrimp paste-side down in the pan. Let that cook for about 3-4 minutes, or until the shrimp is fully cooked (it will turn pink). Flip it over and toast the tortilla side for another 2 or so minutes.
Remove from the heat and repeat for as many prepped tortillas as you have.
Fill your taco with any / all of the above toppings you want and enjoy!
