Peach, Tomato, Cucumber + Burrata Salad

Ingredients:

  • 2 large (heirloom) tomatoes; cut into slices

  • 2 peaches; cut into slices

  • 1 cucumber; cut into slices on the diagonal

  • 1 tsp of sweet white vinegar

  • 2 tsp of extra virgin olive oil

  • 1/2 tsp of kosher salt

  • A few cracks of black pepper

  • A handful of basil leaves; julienned

  • 1 ball of burrata

  • Extra EVOO and finishing salt to finish)

In a large bowl, combine the sliced tomatoes, peaches, and cucumber.

Add the dressing—vinegar, olive oil, salt, and pepper—and toss gently with a large spoon. Taste and adjust the seasoning as needed.

Add the fresh basil and toss again, gently.

Transfer the salad to a serving plate and place the burrata ball on top.

Drizzle with a bit more olive oil and finish with a pinch of flaky salt.

Serve immediately and enjoy!
