Jammy overnight oats

This has been my go-to breakfast lately, and I think I’ve finally perfected the taste and proportions. It’s an excellent meal-prep option to keep in the fridge for the week.

Ingredients:

  • 1/2 cup of rolled oats (I personally like the Trader Joe’s rolled oats with ancient grains and seeds)

    • If you can’t find / don’t have access to those TJ’s oats, do 1/2 cup of oats and a tbsp of chia seeds

  • 1/4 cup of low-fat vanilla yogurt

  • 1/4 cup + 1 tbsp of coconut beverage

  • 1 tbsp maple syrup

  • 1 tbsp of jam (flavor of your choice)

Note: This recipe makes one portion of overnight oats, but you can easily double, triple, or adjust as needed.

In a container of your choice, mix together all the ingredients until no dry oats remain. Cover the container and place it in the refrigerator overnight.

When you’re ready to eat, simply top with fresh fruit of your choice and enjoy.
