Country club chicken salad

Ingredients:

  • 2 tbsp plain Greek yogurt

  • 2 tbsp mayo

  • 1 tsp grainy mustard

  • ¼ tsp kosher salt

  • ¼ tsp onion powder

  • ¼ tsp garlic powder

  • 2 stalks of celery; finely chopped

  • 1/3 cup of red onion; finely chopped

  • 3 (ish) cups of cooked chicken; shredded (I like to use a whole rotisserie chicken for this)

  • 2 heaping tsp of pecans; finely chopped

  • 2 heaping tsp of dried cranberries

In a large bowl, make your dressing by combining the Greek yogurt, mayo, mustard, salt, onion powder, and garlic powder. Whisk until smooth, then taste and adjust the seasoning as needed.

Add the celery, red onion, chicken, pecans, and cranberries, then toss until everything is evenly coated in the dressing.

Serve immediately, or transfer to a container and refrigerate for a bit before serving to let the flavors come together.

Enjoy with crackers, on a sandwich, or scooped over a salad — the possibilities are endless!
