Cheese Burekas

Ingredients:

  • 2 sheets of frozen puff pastry; defrosted

  • 1 cup of crumbled feta cheese

  • 2 cups of small curd cottage cheese

  • 1 cup of low moisture shredded mozzarella cheese

  • 1/2 cup of grated parmesan cheese

  • 2 eggs (1 for the filling, 1 for the egg wash)

  • 1 tbsp of parsley; finely chopped

  • 1/4 tsp of fresh cracked pepper

  • 1/2 tsp of kosher salt

  • Optional but encouraged: sesame seeds

Preheat the oven to 400°F and line two baking sheets with parchment paper. Set aside.

In a bowl, combine the feta, cottage cheese, mozzarella, one egg, parsley, pepper, and salt. Mix until well blended.

Cut the puff pastry sheets into six equal squares each. Place a spoonful of filling in one corner of a square, leaving space around the edges. Fold the pastry into a triangle and transfer to a prepared baking sheet. Use a fork to press along the edges to seal. Repeat with the remaining squares.

In a small bowl, whisk the second egg. Brush the tops of the triangles with the egg wash, then sprinkle with sesame seeds.

Bake for 18–20 minutes, until the pastry is golden brown and crisp on the bottom.

Cool slightly before serving warm. Serve with some green zhug.
